    Eggplant Bacon

    Eggplant is usually used to make delicious things like Baba Ganoush, Harissa Eggplant Dip, and Eggplant Lasagna Roll-Ups. But eggplant bacon...is that even real?

    Yes! If you're looking for a vegan option that does not contain the fat that bacon does, eggplant bacon will leave you astounded and begging for more. All you need is a few ingredients and about 40 minutes.

    Cut up thin strips of eggplant and marinate them in a mixture of smoky spices, maple syrup, tamari, and vegan Worcestershire sauce for a burst of spicy, sweet, and savory flavor. Your taste buds won’t even know what hit them. The eggplant is to be baked at a low temperature for approximately 20-30 minutes. Keep checking to see them turn golden brown and crispy, just like strips of bacon.

    This eggplant bacon is God-sent. It will taste smoky, crispy, salty, slightly chewy, flavorful, and so delicious that you’ll want to swear off bacon for the rest of your life.

    Coconut Whipped Cream

    Coconut whipped cream is a dairy-free option for all those who love classic whipped cream in their coffee, shakes, ice-creams, or straight out the fridge. The only difference is that instead of using heavy whipped cream, we use a vegan-friendly version that contains good fats and is healthy!

    All you need to do is select superior quality full fat coconut milk or coconut cream. Chilling it overnight is the key. You must freeze so that it has enough time to harden. The next morning, scoop out the hardened coconut cream and whip it up with a hand mixer till light peaks are formed.

    While resisting the urge to lick off the hand mixer, mix in one or two teaspoons of powdered sugar or stevia to keep it healthy. Remember, liquid sweeteners can be too heavy for this recipe.

    Watermelon Seeds

    Did you know that watermelon seeds are actually edible? It's true. Watermelon seeds are entirely safe to eat and are nontoxic.

    Watermelon seeds can be eaten raw. We understand that eating raw seeds can seem forceful, but there are many ways to make them a delicious snack. All you need to do is roast the watermelon seeds in an oven after sprinkling some salt and olive oil on top for 10-15 minutes. When ready, crack the seeds off and pop them in your mouth like you would sunflower seeds. Crunchy and flavorful, these seeds are perfect for snack time.
